Cheesy Hash Brown Casserole Recipe

Even though breakfast is widely considered to be the most important meal of the day, many people skip it citing lack of time. This cheesy hash brown casserole recipe is so tasty, however, you’ll be tempted to bypass your snooze button and get out of bed right away so you can start your day with a heaping helping. It can even be assembled ahead of time, so you can prepare it the night before and pop it in the oven in the morning to cook while you get ready. It’s so hearty it could be eaten on its own, but it also makes a great side dish for an omelet or French toast. Whether you make it for an everyday meal or save it for a special occasion brunch, this casserole will wake up your taste buds and help you start your day off right.

You’ll need 2 pounds of potatoes; using frozen hash brown potatoes will save you a ton of prep time, but be sure to thaw them first. In a large bowl, stir the potatoes together with ½ cup of melted butter, ½ cup of chopped onion, one can of undiluted condensed cream of chicken soup , two cups of mild shredded cheddar cheese, 1 teaspoon of salt, and a dash of pepper. In a small bowl, combine 2 cups of crushed cornflakes with an additional ¼ cup of melted butter.

Pour the potato mixture into a 9 by 13 inch baking dish then evenly distribute the cornflake mixture over the top. Preheat the oven to 325 degrees and bake the casserole uncovered for one hour, until the casserole is hot and the cheese is bubbly. Remove the casserole from the oven and sprinkle a little ground paprika over the top to give the dish some color and visual impact.
